When picking clay what is the best material to use? All I can seem to do is pick something like a vray material, but I have no control over the material. I can't bring that material into a material slot.

yes, drag'n'drop seems really hard to manage...
but, when you click on this button, the best thing to do is to choose a scene material or a material wich is into the material editor. After choose, Sr will ask you if you want an instance or copy. if you instance, then you can go into the mat editor and make changes to that material.
